Carroll scored the fifth fastest Premier League hat-trick as his West Ham side came from 2-0 down to lead 3-2, before eventually drawing 3-3 with Arsenal.
The former England international scored his first a minute before the interval, rising above Nacho Monreal to head home Aaron Cresswell’s left sided cross.
Before the half was out, the 27-year-old quickly doubled his tally as he acrobatically fired home after his original miss-hit effort rebounded of Gabriel.
Into the second-half and he completed his first hat-trick for the Hammers, heading home at the far post from Michail Antonio’s right sided cross.
